One of my friends made me a coconut margarita a few years back and every so often, I crave it. Not a huge cocktail gal but I do love a Margarita! I have been acting like a spokeswoman for this recipe on IG as if it were my very own, but we have this gal to thank!
I did incorporate a couple slight twists though, so wanted to share exactly what I used in case you want to sip the marg I have fallen in love with.

What you need
For 1 cocktail
2 oz tequila (El Tesoro Reposado)
2 oz coconut milk (you want silky / creamy — I love / have luck with this one)
3/4 oz Cointrau
1 oz freshly squeezed lime juice
1 3/4 oz simple syrup
Dash of Madagascar Vanilla
Dab of Vanilla Bean Paste
Personally: no salt for me with this one but you can add to rim if you like!
Method
Prep the simple syrup. 1 part granulated sugar and 1 part water into a saucepan (I usually just do half a cup and store in the fridge, trust me you’ll wanna make another batch soon). Heat until sugar dissolves. I added a little splash of my favorite Madagascar vanilla syrup and a tiny (smaller than a dime) dab of this vanilla bean paste to the pan, too. The vanilla adds such a gorgeous flavor! Put in a glass jar and in the fridge to cool for a few minutes.
Add ice to a shaker and pour all ingredients over ice and shake for 20 seconds.
Pour over ice and garnish with a lime. Divine.
