List (serving size: 4)
1 cup olive oil
½ tsp sea salt
½ pepper
2 punnets ripe cherry tomatoes
8 large basil leaves roughly torn
8 small garlic cloves, smashed
8 oz burrata cheese
Method
Add olive oil to a skillet pan and heat up over medium heat. Add in the tomatoes, sea salt, pepper, basil, and garlic. Cover and allow to braise for 20 minutes. Remove the lid and remove the pan from heat. While still hot, set the skillet under an oven broiler at medium heat. Allow to broil until tomatoes begin to char, about 5 minutes or so. In a bowl, arrange burrata and while still hot spoon the tomatoes over the burrata and serve warm with bread! Enjoy! xx

Wow – Ashley, this was incredible. Tried it during quarantine and so easy and oh my goodness good!! It will be a hosting staple, thank you so much for sharing!
Aw yay! That makes me happy to hear. I know, I couldn’t believe how simple it was. I love those dishes that look super impressive but take little effort! Hope you and your family are doing well, lady xx
Ive made this twice so far (in a week) We love it so much. I didn’t have the cheese it called for so I used Labnah and was amazing. So simple to make.
Yum!! So I just used some of my leftover braised tomatoes today with hard boiled eggs, dukkah, and balsamic and it was SO good!! I am inspired to make the braised tomatoes more often and experiment using them on meals! I bet would be so good with pasta dishes, too!
