Banana bread is my favorite thing to bake. I don’t make it very often, but each time I do I tell myself I need to make it more. So easy and delicious for weekday breakfast with a cup of coffee. Plus, it takes very little effort. I like to whip it up on a Sunday night and have it in the fridge for the morning and week ahead (love it on the cooler side). We use this dairy-free recipe and add almond extract for a nutty flavor, or sometimes we will put walnuts or almonds in the mix. It’s so good.

*If you want to add the banana garnish, wait 30 minutes before adding it to the top. It adds a nice little touch!
Ingredients
1⁄2 cup oil
3⁄4 cup sugar
1 egg
1 1⁄2 cups flour
1 teaspoon baking soda
1⁄4 teaspoon salt
1 tablespoon almond extract
3 medium mashed bananas
Directions
Preheat oven 325
Mix oil and sugar, add egg and stir
Add next 3 ingredients
Add bananas and pour into floured/waxed pan
Bake for 1 hour- test with a toothpick

You could add a fourth banana to reduce your sugar amount. Also, the riper the banana, the more sugary it tastes. Happy baking!
